How
to Operate A Restaurant
Despite this growing trend for eating out and a steadily expanding sales volume,
the mortality rate in the food service industry is extremely high. One
investigation after another has shown that from one-fourth to one-third of the
restaurants that begin their existence in any one year were out of business by
the end of that year.
What are the causes for failure? "How to Operate A Restaurant" thoroughly examines
them and tells you what you can do to avoid them.
This book represents the distillation of experience and knowledge of many owners
and managers successfully running all types of operations: from drive-ins and
diners to service restaurants, cafeterias and inplant feeding units, with sales
volumes ranging from $80,000 annually to $1,700,000 a unit, located throughout
the nation from Maine to Florida and across to Washington and California.
To these restaurateurs and to the restaurant industry as a whole this book is
respectfully dedicated.

The
Best Party Recipes - Edith M. Barber
The word "hospitable" has a pleasant ring to the ear. According to the
dictionary, this adjective is denned as "receiving and entertaining guests
generously and kindly." Today, the adverb "easily" should be added to that
definition, as the whole trend in entertaining is toward simplicity.
Every hostess likes to receive the compliments, "You always seem to have such a
good time at your own parties," and, "You do everything so easily."
Of course, this does not mean that she has not spent plenty of time in planning
and preparing for a party, but it does indicate that the apparently unharried
hostess is not plagued with too many last minute details that take her away from
her guests.

loving hands. The recipes in this compilation represent the
greatest recipes that mothers used to make! The vast majority of
these recipes have been handed down by word of mouth from one

hundred years.
The author, a New England woman, has during her life tested out
in her own kitchen the greater part of these recipes, which
represent the best cookery of those times.
This material was originally published in Suburban Life, where
it obtained such recognition as seemed to warrant its

respond to a toast in any occasion.

The Cook's Decameron - Mrs. W. G. Water
"No one has any claim to be called a cook who cannot make soup without
artificial clearing," said the Marchesa. "Like the poet, the consomme is born,
not made. It must be clear from the beginning, an achievement which needs care
and trouble like every other artistic effort, but one nevertheless well within
the reach of any student who means to succeed. To clear a soup by the ordinary
medium of white of egg or minced beef is to destroy all flavour and
individuality. If the stock be kept from boiling until it has been strained, it
will develop into a perfectly clear soup under the hands of a careful and
intelligent cook. The fleeting delicate aroma which, as every gourmet will
admit, gives such grateful aid to the palate, is the breath of garden herbs and
of herbs alone, and here I have a charge to bring against contemporary cookery.
The Complete Book of Cheese - Robert Carlton Brown
There isn't much difference between Cheese Souffles, Puffs and Ramekins. The
English Encyclopedia of Practical Cookery, the oldest, biggest and best of such
works in English, lumps Cheese Puffs and Ramekins together, giving the same
recipes for both, although it treats each extensively under its own name when
not made with cheese.

Favorite Dishes -
Carrie V. Shuman
Wild ducks, canvassback, redheads, etc., are roasted without stuffing. After
they are picked and thoroughly cleansed, roast them in a tin kitchen before a
hot fire or in a quick oven for twenty-one minutes. They should be well browned
on the outside, but the blood should run when cut with a knife. Unless underdone
the flavor of the duck is destroyed. Fried hominy is generally served with wild
duck; and fresh celery. Currant jelly is sometimes used.
The Healthy Life Cook Book, 2d ed -
Florence Daniel
Never eat boiled vegetables. No one ever hears of a flesh-eater boiling his
staple article of diet and throwing away the liquor. On the contrary, when he
does indulge in boiled meat, the liquor is regarded as a valuable asset, and is
used as a basis for soup. But his meat is generally conservatively cooked—that
is, it is baked, roasted, or grilled, so that the juices are retained. If he has
to choose between throwing away the meat or the water in which it has been
boiled, he keeps the liquor—witness “beef-tea.” For some unknown reason he does
not often treat his vegetables in the same way, and suffers thereby the loss of
much valuable food material.
Joe Tilden's Recipes for Epicures
Sprinkle cayenne and a few drops of lime juice over as many large oysters as are
required, then wrap each oyster in a thin strip of bacon or fat salt pork.
Fasten with a wooden tooth-pick and broil until the bacon is crisp. Serve very

The Physiology of Taste -
Brillat Savarin
Well; what could be refused to that which sustains us, from the cradle to the
grave, which increases the gratifications of love and the confidence of
friendship which disarms hatred and offers us, in the short passage of our
lives, the only pleasure which not being followed by fatigue makes us weary of
all others.
Prepare and Serve a Meal - Lillian B. Lansdown
Full title: How to Prepare and Serve a Meal and
Interior Decoration
Toasts - William Pittenger
A lady in California had a troublesome neighbor, whose cattle overrun her ranch,
causing much damage. The lady bore the annoyance patiently, hoping that some
compunction would be felt for the damage inflicted. At last she caught a calf
which was making havoc in her garden, and sent it home with a child, saying,
“Tell Mrs. A. that the calf has eaten nearly everything in the garden, and I
have scarcely a cabbage left.”
The Low Fat
Way to Health and a Longer Life
The complete Guide to better health through Automatic Weight Control, Modern
Nutritional Supplements and a Low Fat Diet.
The Low Fat
Way to Health and a Longer Life
The reader may well ask-"What will this
book do for me?" or to paraphrase Ben Franklin, "Can it bring me
health (which is really wealth), happiness, and wisdom?" It can, for
many reasons.
In preparing the following work for the general reader, the
author has aimed at a twofold objective: to prolong your life and to
save you from crippling or fatal heart disease resulting from
hardening of the arteries. The information offered here is based
upon the writer's 25 years of medical practice, extensive research,
and clinical experience.
The low-fat diet, weight reduction, and nutritional program
presented in this book are not a panacea for all illnesses. They are
not a get-healthy-quick nostrum or cure for everything that ails
you. However in the opinion of the author and a large number of
scientists and physicians, these measures are the most effective
known to prevent and treat hardening of the arteries or
atherosclerosis, today's greatest cause of sickness and death.
There are unquestionably other still unknown causes of hardening of
the arteries in the heart, brain, and other vital tissues of the
body. Not only is there little or nothing known about them, but
there is no effective remedy other than those presented in the
following pages.
At this very moment, countless research scientists and
physician-investigators are searching the unknown in the
life-or-death quest for the various causes and the cure for
atherosclerosis. If this miraculous discovery should come to pass,
the way of eating and living described in this book may become of
historical interest only.

JAPANESE
COOKBOOK:
100 Favorite Japanese
Recipes for Western Cooks!
The beautiful land of Japan, with its four distinct seasons and its
charming natural scenery, has given the Japanese people a unique
personality that in turn has produced a distinct type of cooking and
food. Its long history makes its foods and their preparation
different from that of other nations. The discerning visitor will
note that the food of the Japanese is influenced by their love of
simplicity and delicate plainness.
The basic materials required in Japanese cooking are white rice,
tender fish, beautiful vegetables of varied hues, miso-soup with its
fragrance, and green tea. The real esthetic value of cooking in this
country is to bring out the various special flavors of the above
materials. For example, if you have some fresh fish, you may prepare
it without changing its natural and peculiar flavor, as in suimono
(clear soups), yakimono (broiled foods), nimono (boiled foods),
mushimono (steamed foods), agemono (fried foods), as sashimi (sliced
raw fish), or as namasu (raw fish mixed with vegetables and flavored
with vinegar). Vegetables may be treated in the same fashion, as
they are available all the year round, and they may be prepared as
hitashimono (boiled greens), nimono (boiled foods), in miso-soup,
tsukemono (pickles), and so on, in such a way as to preserve their
original, special flavor. Sometimes they are used together with
other foods for flavor or fragrance.

The Cookie Jar
THE COOKIE JAR is the outgrowth of a hobby which began in my
childhood and lasted through twenty years. I loved the attic better
than any room in the old house in the South where I was reared.
Evidently my great-grandmother had the same fondness for it. She
hoarded valuables in that attic. Her recipes, in a hand-written cook
book, which I found in the attic, began my hobby for collecting
formulas for small cakes. The interesting information she had
written about the cakes was the inspiration for writing this book.
The collector's demand for nothing but the authentic grew in me as
the years passed. No formula went into my collection unless it was
the best of its kind. Gradually I began looking to other lands to
satisfy my desire for new and unusual recipes. I found them in out
of the way places, in cottages, in manor houses, in castles. I
present them to the housewives around the world, with the hope that
they may find as much pleasure in using them as I have found in
collecting them and writing this book.
